- 1 shallot.
- 1 egg yolk.
- one whole fresh cream brick.
- 2 tablespoons butter.
- juice of half a lemon.
- salt.
- pepper.


Finely mince the shallot
.. Melt the butter in a saucepan .
Melt the shallot in.. butter (it must become transparent)

Add the cream .

Boil 30 seconds .
. Add
lemon juice .

Add salt and pepper to taste.

.. Remove from heat
Add the egg yolk and serve immediately .

(If you are not ready room you can wait before introducing egg yolk and when serving boil before adding the egg yolk)

Notes: To improve this sauce, you can add either: - a small box of Paris mushrooms finely émincéou - 1 tablespoon of salicornia to vinaigreou- choices spices (curry, pepper, saffron ...)
