- 2 egg yolks.
- 5 large garlic cloves.
- 20 cl olive oil.
- 1 tablespoon mustard.
- 1 vinegar.
- 1 pinch of pepper.
- 2 pinches of salt (or more, depending on your taste).


First of all, it will take the eggs and vinegar, are at room temperature .
Start by crushing the garlic in a mortar. , to make an ointment .

Add the 2 egg yolks, salt and pepper and a little oil .
. Mix well with
a whisk and add the vinegar and mustard .

While stirring, add now that the oil is poured into small nets .

Remarks: We can use an electric mixer on low speed, but I always starts with a hand whisk.
