Andalusian sauce

INGREDIENTS

(8 people)

- 25 cl of mayonnaise.
- 200 g of fresh tomatoes.
- 2 cl of oil.
- 1 clove of garlic.
- 20 g shallots.
- 1 small bouquet garni.
- 40 g of red pepper chili.
- 40 g green pepper.
- salt, pepper.

PREPARATION


Peel the tomatoes in boiling water, remove the seeds and chop into small pieces .
Sweat the minced shallot in oil without. let brown. Add tomato, garlic and bouquet garni. Add salt and pepper. Cook until complete evaporation of water .

Cut peppers, spend 5 to 10 minutes in a hot oven (or under broiler) in order to remove the skin. Cut into cubes .

Stir in tomato paste and diced pepper mayonnaise .
