- 9 kg of apples.
- water.
- 5 cups of honey (approximately).
- 3 lemons (juice and zest).

Wash apples and remove the cores and cut them into quarters. Put them in a large pot and pour in enough water to almost cover. Simmer 1 1/2 hours .

Pass the pulp through a sieve, the blender, or food mill and return it in the original pot (if it can go in the oven) or in a roasting pan .

Add 1/3 cup honey for each cup (25 cl) pulp, then add the lemon juice, zest and spices ..

Put the apple pulp mixture and cook slowly in the oven at 150 ° C (gas mark 5), stirring occasionally. The butter will thicken as it cooks .

It will take several-perhaps the night- hours to thicken enough .

When it is thick has your taste, remove from the oven and put it into sterilized jars, leaving 2 cm of headspace. Adjust lids and process 10 minutesbath of boiling water.
