INGREDIENTS

- 1 small glass of cognac, rum or brandy.
- 50 g of ham.
- 1 onion.
- White 1 leek.
- 1 whole garlic head.
- thyme.
- 2 bay leaves.
- a little dried orange peel.
- 7 or 8 peppercorns.
- 1 dose of saffron.
- salt, pepper.
- 50 g butter.
- 2 tablespoons oil.
- 1 tablespoon tomato paste and flour.
- 1 half liter of dry white wine or 1 glass of Madeira.
- 1 pinch of cayenne.

PREPARATION

..
Always high heat, sauté shellfish (prawns, lobster tails, etc.) in a mixture of butter and oil.

Flambé with the selected alcohol.
. In this juice to brown the ham, onion, leek, a whole head of garlic, thyme, bay leaves, orange peel, peppercorns, saffron.

Add 1 tablespoon of tomato paste. On the other hand mix 1 tablespoon of flour and a hint of cayenne, mix with half a liter of white wine or 1 glass of Madeira.

Throw this mixture in the previous sauce, add one half glass of water and boil 20 minutes.

Pass the sauce, return to the heat, salt, pepper, add shellfish, cook 15 minutes and serve hot .
