Asian citrus vinaigrette

INGREDIENTS

(4 people)

- 25 cl olive oil.
- 1 tablespoon sherry vinegar.
- 3 tablespoons soy sauce.
- 1 lime.
- 1 untreated lemon.
- 1 orange.
- 1 grapefruit.
- 1 handful chopped fresh coriander.
- 1 teaspoon grated fresh ginger.
- 1 pinch of chili powder.
- 2 pinches of celery salt.
- 2 pinches of ground coriander.
- 1 pinch ground pink peppercorns.
- 2 turns of the pepper mill.
- 3 drops of Tabasco.

PREPARATION

Cut citrus in half 2. Press and mix the juice .
Peel the other in bright halves, cut the pulp into small pieces (take care to recover render juice) .

Stir olive oil with citrus juice, whisking. Add the vinegar and soy-sauce, mix .

Season with all other ingréients, mix well. Add the pieces of citrus and coriander .

Serve this salad dressing with poultry or fish. It is even better warmed slightly .
