Ice cream with biscuit

- 4 egg yolks.
- 120 g of sugar.
- 1 pinch of salt.
- 40 cl of milk.
- 2 packets of vanilla sugar.
- 1/2 teaspoon cinnamon.
- 25 cl whole cream.
- 200 g biscuit.


Beat the foam egg yolks with sugar and salt. Add the milk in a thin stream, and vanilla sugar and cinnamon .

Make thicken the mixture in a water bath, turning constantly .

Leave cool, turning occasionally. Then add the caramelized biscuit crumbs and pour the mixture into a container. Put it in the freezer for 20 minutes .

Whip the cream and fold it gently into the mixture.

Put ice in the freezer for at least 4 hours .

Serve the ice with apricot juice or jam of warm apricots .. < br />

Notes: Absolutely amazing and delicious!
