INGREDIENTS

(2 persons)

- 5 eggs.
- 1 eggplant.
- salt, pepper.

PREPARATION


Rinse eggplant. Without peeling, cut into small dice (about 1cm side .
. In a non-stick frying pan over high heat, put the eggplant dice WITHOUT fat, stirring regularly.
. In a bowl, mix the eggs, salt, pepper and set aside .

When the eggplant cubes begin to grill a little bit, add a knob of butter and fry gently .

When the eggplant cubes are cooked (it's fast enough), pour the eggs over and cook your omelette .. < br />

.. Serve immediately
