- 400 g bush (or better: Corsican bruccio).
- 4 eggs.
- 20 cl of single cream.
- 1 onion.
- 1 bunch chopped fresh mint.
- 1 pastry (puff or according to taste).
- grated cheese (quantity to taste).
- salt, pepper.
Mix in a bowl the bush and cream .
Add eggs, mint, salt and pepper .
Spread the dough in a pie plate and spread over the onion .
Pour in the bush on top. Sprinkle with grated cheese .
Bake about 1/2 hour in a moderate oven (gas mark 6/180 ° C) .
Serve hot or cold (but it's still best hot) with green salad .
