- 3 large eggs.
- 100 g brown sugar.
- 1 bag of vanilla sugar.
- 250g mascarpone.
- 24 biscuits.
- 1/2 liter of unsweetened black coffee.
- 30 g bitter cocoa powder.
Separate the whites from the yolks. Mix the egg yolks + sugar + vanilla sugar. Add the mascarpone whisk .
Beat the egg whites until stiff and gently fold with a spatula to the above mixture .
Prepare black coffee ..
Wet the biscuits in the coffee .
Line bottom of pan with cookies. Cover with a layer of cream, eggs, sugar, mascarpone. Alternate cookies and cream .
Finish with a layer of cream. Sprinkle cocoa .
Refrigerate 4 hours minimum.
